About this oil

Why kitchens run palm oil

Fractionated from refined palm oil to stay liquid at kitchen temperature, palm olein carries a naturally high share of saturated and monounsaturated fat that resists breakdown in the fryer. That stability is why it is a standard frying oil for snack makers, bakeries and high-volume fry houses: crisp, non-greasy results with a clean, neutral flavor and zero trans fat. Because it is certified kosher for Passover (OU-P), palm oil is also the go-to frying oil for Passover production, when kitniyot oils such as soybean, canola and corn are off the menu.
